The Job
Skyfeast is located 82 floors above ground level at the iconic Sydney Tower. Guests experience stunning 360 degree views as the venue revolves around Sydney's skyline and points of interest. Skyfeast offers a premium buffet dining experience for guests - serving contemporary Australian cuisine with an international flair. There are over 30 international dishes on offer with various stations including seafood, antipaso, sushi, roasts, Mediterranean and desserts.
We are currently seeking a Senior Sous Chef to join the busy production kitchen brigade. This will be a hands on role based on a 7 day rotating roster. This senior role will see you leading the kitchen team in Head Chef's absence, so is suitable for a senior chef looking to step up in a renowned venue.
The role encompasses
- Cooking and preparation of dishes
- Team management - hiring, training and developing
- Roster and timesheet management
- Menu planning
- Ensuring compliance in regards to WHS, food safety, employment laws
- Managing food orders and inventory
You
To be successful in this role, you must have;
- A minimum of 2 years' experience as a Sous Chef/ culinary leadership role
- Have worked in a high volume a la carte restaurant, buffet or hotel with similar standards focused on quality food production.
- Be a positive leader with the ability to lead by example.
- Interest in menu development for an international cuisine buffet.
- Basic computer skills including word, excel and email.
- Have a sound knowledge of OH&S, HACCP, Par levels, stock control, ordering as well as stock taking.
- The WANT to learn and develop under some highly experienced Chefs within the Trippas White Group
- Clear and precise communication skills written as well as oral.
- Immaculate grooming and a good standard of personal hygiene
- A strong understanding of food and labour cost controls.
- Motivated and with the ability to make decisions under pressure within a fully operational kitchen
- Flexible availability - 7 day rotating roster. Lunch and dinner shifts.
